Summer is still evident in the juicy fruits, but the coolness and comfort of autumn are already noticeable. It is precisely this transition—from lightness to richness—that is the focus of brand chef Vasily Ratner’s autumn update at Brasserie Lambic.
For example, watermelon reaches its ideal flavor at the beginning of autumn, which is why Lambic offers it in a salad with chana cheese and yuzu sauce (600 rubles). Or okra pods — a rare guest in Moscow restaurants, an African plant that is also grown in southern Russia. Here it appears in two versions: in tomato and soy sauce with sesame seeds (890 rubles) and crispy — okra frito (850 rubles). There is also a new sweet dish, «Rum Baba» (990 rubles), a dessert made according to an old French recipe. Inside, there is a berry filling, light cream, and a generous portion of rum for soaking.
Among the new products are also:

— Cream of broccoli soup with chorizo (750 rubles);
— Waldorf salad with smoked chicken (990 rubles);
— Baked eggplant with spicy minced lamb and pomegranate (990 rubles);
— Watermelon canapés in anise vodka (400 rubles);
— Baked Camembert with plums and grapes (1600 rubles);
— Assorted mushrooms with potatoes (1,250 rubles);
— Onion cookies with cheese mousse (650 rubles);
— Chicken confit with celery root (1,250 rubles).

Introducing the first menu update at Lambic Collection! Our chef, Ivan Negutarov, has created 15 new dishes that are the perfect accompaniment to the drinks on Lambic’s beer and wine lists! Let’s start our tour of the new dishes with the appetizers section — beef tartare with ndui sauce, steamed brioche with beef short ribs, turkey pâté, cheese croquettes with jamón, and beef brisket tacos. For salads, there’s a new mushroom salad with baby spinach, sautéed oyster mushrooms, and enoki mushrooms. In the main courses section, be sure to try the new mini burgers with a trendy presentation in pepper sauce or the burger with crispy dorado. For a group, we recommend the pork knuckle or the crispy-breaded sea bream with squid. In the guests’ favorite “Pasta” section, there are three new additions: shrimp ravioli, Roman-style carbonara, and spaghetti with meatballs in a meat sauce. Our pastry chef, Angelina Morozova, has created three new desserts, and each one is worth trying: — Tiramisu: homemade savoiardi cookies with mascarpone mousse and caramel. — Belgian Waffle: a coffee mousse dessert shaped like a Belgian waffle. — Lemon Choux: two mousse pastries with a liquid center inside.
