Fruit and Berry Lambic: A History of Succulent Flavor

article illustration

Lambic is a beer that is produced by spontaneous fermentation. To put it simply, no yeast is specially added to the beverage; the fermentation takes place due to the microorganisms in the environment. And not just any environment is suitable: real lambic is only the one produced in the Senna Valley.

The result is a drink with a unique sour taste and characteristic aroma, which has notes of fruit, wine vinegar, horse blanket, old leather and wet hay. Connoisseurs find this drink very interesting, people who are far from beer experiments - prefer more classical tastes. But there is a variant that will suit both. It is a fruit or berry lambic, which, on the one hand, retains all the main features of the family, and on the other hand, is milder in taste than the classic variety.

What are they like?

Fruit beer was born in Belgium, and there is nothing mysterious or romantic in the history of its birth - simply that local farmers had nowhere to put the excess fruit. Producers added them to the foamy drink and got an interesting result, which modern brewers gladly took up.

Today you can find a variety of fruits and berries in lambic, but the most popular drink in the family is probably Cherry Creek. For its production, berries of a particular variety of tree, necessarily grown in the vicinity of Brussels, are taken. The finished product impresses - with its stunning ruby color, beautiful pink foamy cap, and, of course, a rich complex taste.

You can also find lambic with apples, peaches, blackcurrants, strawberries, raspberries - in short, there are options for every taste.

Separately, it is worth noting such a variety as Gueuze, which is a mixture of young and old lambic. It has a sour, dry taste, which is advantageously shaded by the added fruit and berries.

Faro is another version of fruit lambic, except for the fruit, in which caramel sugar is added. Thanks to this, the drink has a sweetish flavor, in which, in addition to juicy fruit, you can trace interesting woody notes.

In order for the fruit lambic to reveal all the flavors when consumed, it is not necessary to cool it below 4-6 degrees. If the beer has been stored in the refrigerator, take it out and bring it to room temperature before tasting. Pour it exclusively into tulip-shaped glasses or glasses of a tripod. Also note that lambic gives a lot of foam, but you don't need to stand it - the drink is served in this form.

Bornem Double beer: a taste with a history

Bornem Double beer: a taste with a history

There are many special options among Belgian brews, especially when it comes to beers with a history. But Bornem Double stands out even among such stars. At the recent California Microbrew Beer Festival, this Van Steenberge Abbey draft was recognized as the best in its category. What is its charm — we will tell you in this article. Main features Bornem Double is a lively beer with a full, rich, velvety flavor that harmoniously combines fruity notes and malt sweetness. The long aftertaste reveals nuances of spices and chocolate, as well as neat hop notes. Separately it is worth talking about the aroma. It is very beautiful, with notes of milk chocolate, brown sugar, vanilla and spices. The variety is good both inside and outside — in the glass it reveals a deep dark brown color with burgundy reflections. Bornem Double is usually served with meat dishes — steaks, grill, game, sausages. Despite the rather high strength of 8%, the beer is very drinkable, and you can hardly feel alcohol in it. It is also perfect for cold seasons, as it has a warming effect. Secrets of production The history of Bornem beer began in 1957 at the Beirens brewery in the town of Wommelgem. After the brewery closed in 1971, thanks largely to the abbots of the Bornem monastery, the recipe was taken over by the Van Steenberge brewery. The beer was originally sold under the St. Bernard brand and with the monk’s image on the label. However, to avoid similarity with the St. Bernardus Watou brand, the logo was changed: an image of a heron holding a fish appeared on the label. The choice of the symbol is not accidental: the heron is a typical inhabitant of the neighborhood of Bornem, which reflects both the charm of the local fauna and the traditional culture of the region. By the way, the word «heron» is often found in the names of local bars and brasseries. The main feature of this dub is the manufacturing technology. The beer is not pasteurized, and after primary fermentation in barrels it undergoes secondary fermentation in bottles, acquiring its unique taste. You can try Bornem Double in any Lambic brasserie. In our beer restaurants you will find a large selection of varieties from all over the world, including Trappists, as well as an excellent assortment of dishes and always cozy atmosphere. Come — we will find something to surprise you!
