The monastic dark ale from St. Bernardus’ most famous brewery, St. Bernardus Prior 8, returns to the taps. The rich flavor opens with tones of malt, black bread and brown sugar.

New English Stout — Saltaire #5 Proper Stout. The creamy smoothness of Saltaire No. 5 Proper Stout, pleasant, creamy notes of roasted malts in its flavor and light smoky-smoky aftertaste will leave no one indifferent.

And also our lineup of authentic Belgian lambics has been enriched with some interesting stuff from the gezeria Tilquin. This is the first blenderie in the French-speaking part of Wallonia. Freshly brewed lambic is purchased from various producers in the region such as Boon, Lindemans, Timmermans, Girardin, Cantillon, corked in red wine barrels and sent to mature for 1, 2 or 3 years. It is then sent for blending in special vats. Each blend contains lambics from 10 barrels (5 barrels of one year old lambic, 3 barrels of two year old and

2 barrels of three year old), Gerardin and Cantillon are always used and Boon, Lindemans or Timmermans are added, and the selection itself is made from 12-20 barrels. After blending, the wort is bottled and sent to mature for another six months, in some cases up to 1 year.

On our menu:

— Oude Gueuze Tilquin a l’Ancienne, 0.375 L (A blend of 1, 2 and 3 year old lambics aged in bottles for at least 6 months).

— Oude Mure Tilquin a l’Ancienne, 0,375 l (with blackberries).

— Oude Quetsche Tilquin a l’Ancienne, 0.375 liters (with purple plum).

A small replenishment in non-alcoholic beer from German producers — Schnitzlbaumer Schnitzei Weiße Alkoholfrei and Engel Kellerbier Alkoholfrei.

Introducing the first menu update at Lambic Collection! Our chef, Ivan Negutarov, has created 15 new dishes that are the perfect accompaniment to the drinks on Lambic’s beer and wine lists!  Let’s start our tour of the new dishes with the appetizers section — beef tartare with ndui sauce, steamed brioche with beef short ribs, turkey pâté, cheese croquettes with jamón, and beef brisket tacos. For salads, there’s a new mushroom salad with baby spinach, sautéed oyster mushrooms, and enoki mushrooms. In the main courses section, be sure to try the new mini burgers with a trendy presentation in pepper sauce or the burger with crispy dorado. For a group, we recommend the pork knuckle or the crispy-breaded sea bream with squid. In the guests’ favorite “Pasta” section, there are three new additions: shrimp ravioli, Roman-style carbonara, and spaghetti with meatballs in a meat sauce. Our pastry chef, Angelina Morozova, has created three new desserts, and each one is worth trying:  — Tiramisu: homemade savoiardi cookies with mascarpone mousse and caramel. — Belgian Waffle: a coffee mousse dessert shaped like a Belgian waffle. — Lemon Choux: two mousse pastries with a liquid center inside. We hope these new dishes will be a great excuse to get together with friends and family at Lambic Collection!
