A light, vibrant menu bursting with fresh seasonal flavors.
Among the new additions is a salad with mango, blood orange, and stracciatella, combining the sweetness of the fruit with the delicate creaminess of the cheese. For a heartier option, try the rustic salad with egg, herbs, and Alpine sausage, while those who prefer lighter dishes will enjoy the green salad with turkey pastrami. The menu also features a refreshing okroshka with turkey pastrami and wasabi.
The appetizer section features roti with feta cream and romesco sauce, potato waffles with beef tartare and truffle mayonnaise, carpaccio of lightly smoked tuna with tonno sauce, and delicate zucchini fritters with avocado guacamole.
Hot dishes include orzo pasta with shrimp and broccoli, cod with green peas and pearl onions, baked sweet potato with ginger chicken, and roti flatbread with tuna and mango.
For dessert, there’s a currant cake, and you can complement your meal with springtime drinks: Jasmine-Pear tea, Strawberry-Rose lemonade, light white wines, and a Hugo cocktail.
You can try the new menu starting March 16 at Brasserie Lambic.
Introducing the first menu update at Lambic Collection! Our chef, Ivan Negutarov, has created 15 new dishes that are the perfect accompaniment to the drinks on Lambic’s beer and wine lists! Let’s start our tour of the new dishes with the appetizers section — beef tartare with ndui sauce, steamed brioche with beef short ribs, turkey pâté, cheese croquettes with jamón, and beef brisket tacos. For salads, there’s a new mushroom salad with baby spinach, sautéed oyster mushrooms, and enoki mushrooms. In the main courses section, be sure to try the new mini burgers with a trendy presentation in pepper sauce or the burger with crispy dorado. For a group, we recommend the pork knuckle or the crispy-breaded sea bream with squid. In the guests’ favorite “Pasta” section, there are three new additions: shrimp ravioli, Roman-style carbonara, and spaghetti with meatballs in a meat sauce. Our pastry chef, Angelina Morozova, has created three new desserts, and each one is worth trying: — Tiramisu: homemade savoiardi cookies with mascarpone mousse and caramel. — Belgian Waffle: a coffee mousse dessert shaped like a Belgian waffle. — Lemon Choux: two mousse pastries with a liquid center inside. We hope these new dishes will be a great excuse to get together with friends and family at Lambic Collection!
