de Chimay

An unfiltered and unpasteurized Trappist ale with a copper-red color and a creamy foam cap. It is the oldest in the line of the Beer de Chimay brewery located at Notre Dame de Scourmont Abbey. It was first brewed in 1862 and was originally called Première. After World War II, the variety was recreated according to the recipe of Father Théodore, who was involved in restoring the production. After bottling, the ale is refined in the bottle, which makes its flavor and aroma more intense.

Taste Characteristics

Has a dense, silky taste, which in addition to the pronounced sweetness, has a slight bitterness and a pleasant astringency. Tones of malt, nuts, caramel, as well as nuances of rum, fruit and berries (strawberries, apricots, cherries and figs). The aroma is light, with hints of fruit.

Gastronomic combinations

The beer is excellent with different kinds of cheeses, from vegetables - especially harmoniously paired with spinach. It can also be served with traditional snacks.
